Biogenic Amines Testing

Biogenic amines can be found in a variety of feed and food for example fish, meat, wine, cheese and other fermented food products. For humans, the ingestion of small amounts of biogenic amines is harmless. Taken up in large amounts, they can cause severe poisoning. The biogenic amines are produced in feed and food by decarboxylation of the corresponding free amino acid. This decarboxylation is catalyzed by bacterial amino acid decarboxylases.
